The breakthrough was highlighted at the Summer Sweet Potato Expo in Chiba City on Aug. 8 [1]. The expo featured more than 200 summer sweet potato gourmet items [1]. Among the offerings was a honey sweet potato soft-serve ice cream, priced at 1,000 yen [1]. Vendors and researchers at the event, including those from the store “志のもと,” said how these high-sugar varieties can be utilized in various culinary applications.

Sato Yoshitake, the representative of Sato no Imoya, focused on the versatility of the crop. He said that sweet potatoes have a great variety of processing options and can be provided throughout the year [2].

Traditionally, the process of aging, or curing, is essential to improve the flavor and texture of the potato. The new "miracle" variety bypasses this requirement, allowing growers to harvest and sell the produce almost immediately while maintaining a premium taste profile [1].
