A dumpling shop in Chofu City, Tokyo, has been awarded the highest gold prize as Japan’s best dumplings [1, 2].

Run by Chieko Yoshimura and her brother Ryuichi, the shop competed in a national event featuring three categories: dumpling shops, ready-made dumplings, and online dumplings [2]. Yoshiharu emerged as the top winner among hundreds of stores that entered the dumpling shop category [2]. During the event, a variety of 16 different dumpling types were offered [1].

Judges evaluated the entries based on the quality of the dough, the balance of the filling, and the integration of domestic seasonal ingredients [1, 2]. Yoshimura said the success was due to a meticulous approach to the product's construction.

"The worldview of gyoza changes. I feel that an incredible amount of calculation went into creating the balance between the skin and the filling," Yoshimura said [1].

The shop emphasizes a strict commitment to Japanese sourcing. Yoshimura said the shop uses high-quality wheat from Hokkaido for the skins, Yonezawa pork from Yamagata Prefecture for the meat, and vegetables primarily sourced from Chofu City [1].

Following the announcement of the award, Yoshimura expressed her emotional reaction to the achievement. "I am just full of nervousness and emotion right now," she said [1].
